Spaghetti Squash with Italian Seasoned Ground Turkey and Marinara Sauce



There are so many delicious vegetables in season right now that have such a great potential for a delicious meal. I have been experimenting with Spaghetti Squash lately and have found it to be sweet, filling and as an extra bonus, good for you!

I am a pasta freak. Coming from an Italian family, if you don’t like pasta and bread, something is se­riously wrong. Ha! I find that us­ing the spaghetti squash for your “noodles” is such a great alternative if you are trying to eat healthier and lowering your carbohydrate intake.

Kids dig this because it is like a magic trick. Cook the squash in the oven and it shreds like noodles! I hope you enjoy this easy, healthy dinner with your family as much as I do!

Preheat oven to



400 degrees.

1 spaghetti squash
1 jar of marinara sauce (yep I said it! Fast is OK sometimes!)
1 lb ground turkey meat
2 Tbl garlic powder
1 Tbl Italian seasoning
1 Tbl Onion Powder
Shredded Parmesan cheese

Slice the spaghetti squash in half lengthwise and scrape out the seeds. In a baking dish, put about a half inch of water in the bottom. Place squash, cut side up and season with salt/pepper. Cover with foil and cook for 40 minutes.

Heat up the jar of sauce (or make your own, or doctor it in a pinch.) Cook the ground turkey until browned and add salt, pepper, Italian seasoning, garlic powder and onion powder. Take out the spaghetti squash and shred into noodles! Pour sauce and ground turkey over it and add some Parmesan cheese. Serve and enjoy!
