Balsamic Pot Roast with Onions


I have been on this crock pot kick for the past week since we have had so much rain in San Diego County recently! It is so incredible to come home to a home cooked meal that fills your home with those comforting aromas.

So that being said, I love pot roast but I am always trying to improve on the recipes I have tried. This was one of those lick your plate clean kind of meals. I hope you all like it as much as my family and I do!

2 lb roast
6 garlic cloves diced
2 cups of your favorite marinara sauce
2 cups beef stock
2 cups merlot wine
2 onions



sliced into thick rings
2 Tbl onion powder
2 Tbl garlic powder
2 cups balsamic reduction (I use Rachel Ray’s premade in the bottle)
3 Tbl unsalted butter
Salt/ pepper to taste

In a sauté pan, melt the butter over medium heat. Season the roast with the onion powder, garlic powder and generous amount of salt and pepper. Sear each side of the roast until a good crust forms. Place all ingredients except reserve 1/2 cup of the balsamic reduction. Mix into the crockpot, stir well. Cook on low for 8 hours. Serve with mashed potatoes, vegetables or salad. When plating this meal, drizzle the remainder of the balsamic reduction over the meat before serving. Enjoy!
