Thai Chicken Lettuce Wraps with Peanut Sauce



Sometimes we need to eat a little lighter and healthier to recover from the busy, food filled weekends. Easy weeknight meals that are healthy and good are a must! One of my favorite types of food has to be anything Asian. There are so many different types of culinary delights made in each of these countries to choose from. This weeks On The Menu is one of my go to’s in the summer because of its healthy, refreshing, low carb flavor wrapped up in a pretty butter lettuce leaf! Here is my version of this delicious meal.

Serves 4

3 boneless skinless chicken breasts
1 head of Butter lettuce
1 cup shredded cabbage
1 cup shredded carrots
1 cup diced cucumber
1 cup shredded broccoli
1 cup diced green onions
1/4 cup rice wine vinegar
1 cup peanut butter
1 cup soy sauce
1 cup hoisin sauce
(find it next to the soy sauce or asian food section in your store )
2 Tbl minced ginger
1 Tbl olive or peanut oil

Slice the



chicken breasts into thin strips and place in a airtight container or plastic ziploc bag. Add 1/2 cup hoisin and 1/2 soy sauce and let marinate for at least an hour. Once the meat is done marinating, place in a sauté pan and cook on medium. While the meat is done cooking all the way through, make the peanut sauce. Mix the remainder of the hoisin, soy sauce , and ginger along with the peanut butter and rice vinegar. Mix the sauce well and set aside. Mix the shredded vegetables together in a bowl and set aside. Gently take off the butter lettuce leaves from the body of the plant. Rinse and set aside. Be sure to keep them whole so they can hold all of the yummy ingredients! Once the chicken is cooked, start the fun part! Assemble in any way that you like. I do meat, veggies then peanut sauce and top with some fresh chopped green onions. Enjoy!
