Sweet and Sour Chicken

 

 

There really are healthy versions of all of the yummy food each of us enjoy. Chinese food is no different. With a few modifications here and there, you can make a healthy, hearty version of your favorite meals!

Serves 4

Preheat oven to 350 degrees.

3 chicken breasts cut into bite sized pieces
1 cup chicken stock
1 cup pineapple juice
1/2 cup of frozen orange juice
2 Tbl soy sauce
1/4 cup apple cider vinegar
1 bell pepper sliced into strips
1 small brown onion sliced into strips
1 cup

 

 

pineapple chunks
2 Tbl cornstarch
1 Tbl Sriracha
Cauliflower “rice” or rice to serve meat and sauce over
Salt/pepper to taste

In a saucepan, combine the pineapple juice, frozen orange juice, soy sauce, chicken stock, Sriracha and apple cider vinegar. Bring to a simmer. Add the cornstarch and let thicken. Pour mixture over chicken in an 8×8 baking dish sprayed with non-stick cooking spray. Add the bell pepper, onion and pineapple. Bake for 45 minutes and serve over rice or cauliflower “rice.” Salt and pepper to taste! Enjoy!
