Asian Sticky Ribs

 

 

Have I told you lately that I love Asian food? It truly is so comforting and flavorful. I like trying different rib recipes since there are so many ways to cook them and season them! This dish is so stick to your ribs (no pun intended ) good that it is perfect in the oven during a chilly winter evening.

Preheat oven to 350 degrees Serves 4

2 lb pork ribs separated
Olive oil for frying
8 garlic cloves peeled and diced
2 Tbl ginger diced
1-4 tsp chili flakes
8 whole star anise
8 Tbl honey
2 cups soy sauce
4 to 5 Tbl rice vinegar

1 bunch of scallions diced
4 cups chicken stock
Salt/pepper

Season the ribs with the salt and pepper. Heat a roasting tray on the stove and place enough olive oil inside to brown each side of the ribs. Add the garlic, chili flakes, star anise and honey and cook for two minutes. Add half the soy sauce, add rice vinegar and dry sherry, bring to a boil. Taste as you go and add more vinegar as needed. Add the stock and onions and place in oven for one hour until tender.

You can even sprinkle these with sesame seeds for added color and crunch!
