This is such an easy and delicious soup that is great to throw in the crockpot and come home to. I am a huge fan of Olive Garden’s Pasta Fagioli soup and have been trying to recreate it as close as possible. This belly warming soup is sure to warm you and your family up on a chilly evening.
At the request from a very nice woman I met in Valley Center over the weekend, Monique from Valley Center Resale located at 28746 Valley Center Rd, requested more crock pot recipes. Thank you Monique for being so sweet and for selling me my new wine bottle opener! It has come in handy already!
1 lb of ground turkey
3 celery stalks diced
6 cloves of garlic
3 carrots diced thin
1 brown onion diced
1 jar of Classico roasted garlic pasta sauce
1 15 oz can kidney or white beans
4 cups chicken stock
1/2 cup red wine
1 Tbl dried thyme
1 Tbl dried oregano
1 Tbl fresh chopped basil
3 Tbl Italian seasoning
Salt/pepper to taste
Grated Parmesan cheese for topping
Cook and brown ground turkey meat and season with 2 Tbl of the Italian seasoning, 3 cloves of chopped garlic, salt and pepper. Once browned, add all remaining ingredients to crockpot, stir well and cook on low for at least four hours. You can always cook on low in the crockpot for four hours, then put the setting on warm the remainder of the time. Top with shredded parmesan!
