Ham Corn and Cheddar Chowder



Soup is my friend. Soup is comforting, filling and so amazing on a cold day. I even have Soup Weeks like this week that are a variety of whatever soups I come up with. I enjoy soups that have protein in them so it is a complete meal. My Mom always says meals need protein! My Mom is a very smart woman. She is kind, loving and so very intelligent. I really took for granted growing up in a home where every night there was a home cooked meal on the table for my brother, Dad and I. What a treat that was. Now I hope to pass that on to my family.

Serves 6 (Leftovers are amazing )

4 cups diced cooked ham
4 cups diced cooked bacon

1 potato diced
4 celery stalks diced
1 cup carrots diced
1/2 brown onion diced
4 garlic cloves
3 cups shredded cheddar
6 cups chicken broth
1 Tbl thyme
1 Tbl Oregano
3/4 cup cream
2 Tbl unsalted butter
Salt/pepper to taste

Sauté the carrots, garlic, potatoes, celery and onion in the butter for about five minutes. Add the chicken broth, oregano and thyme and let simmer for 20 minutes. Use an immersion blender or food processor to blend soup in batches until smooth. Pour mixture back into pot then add cream and cheddar. Mix until smooth. Add corn and ham and heat for about five minutes. Season with salt and pepper to taste. Serve in bowls and top with chopped bacon and chives if desired. Enjoy!
