Banh Mi Sandwiches OR Salad



Each of us are looking to be healthier for the New Year — but I love bread. Here are two options that will satisfy both that are equally delicious.

Serves 4.

2 lb pork roast
2 cups shredded carrots
1 cup hoisin sauce
1 cup soy sauce
1 cup teriyaki sauce
3 cups chicken or pork broth
1 cup chopped cucumbers
1 cup sliced radishes
Juice of two limes
4 hard French rolls sliced

1 cup mayonnaise
1/2 cup cream wasabi
6 garlic cloves diced
1 onion sliced
1 bunch of scallions diced
1/2 cup Chinese five spice



cup apple cider vinegar or rice vinegar
1 cup sugar
Cilantro and bean sprouts (if desired)

Preheat oven to 350 degrees. Pour chicken or pork stock in large baking pan. Place onions, garlic, hoisin, teriyaki and soy sauce in pan. Rub Chinese five spice all over pork roast. In a separate pan, sear the pork on each side. Place in roasting pan in broth and vegetables. Cook for three hours.

To pickle the carrots, radishes and scallions: boil two cups of water and add the carrots, radishes,



scallions, sugar and vinegar. Let cool until the meat is cooked.

When meat is done in the oven, finish on the BBQ for two minutes per side.

Mix wasabi and mayonnaise and spread on each side of the sliced bread. Add sliced meat, pickled carrots, radishes and scallions. Enjoy!! There are so many variations to this. Add your favorite fixings to this delicious meal. Instead of bread, use a bed of Romaine lettuce and a ginger citrus dressing with these ingredients for a delicious low carb twist!
