Greek Lemon Chicken Soup

 

 

I finally felt chilly last night as I had my window cracked open at my home for some fresh air. That wonderful moment where you can finally feel Fall has arrived, is so refreshing. During this time of the year as well, so comes the cold and flu season. What is the best soup when you are sick? Really any soup that you enjoy but my favorite go to is any version of Chicken Soup.

This recipe is so light and delicious; it gives you all of those great ingredients to help you smile even when you aren’t feeling good.

Serves 6

10 cups chicken broth
4 chicken breasts
4 celery stalks (diced)
1 1/2 large brown onion (diced)
3 large carrots

 

 

(diced)
4 garlic cloves (minced)
4 lemons (juiced )
1 Tbl lemon zest
1 Tbl chicken bouillon
1 Tbl garlic powder
1 Tbl onion powder
6 cups cooked rice
3 cups feta cheese
Salt/pepper

Add all of the above ingredients together EXCEPT rice and feta cheese. I will add one cup of the rice at this time, reserving the rest for later. Bring to a boil and simmer until chicken is cooked through. Remove chicken from broth and shred evenly. Place chicken back into broth. I usually keep the soup and rice separate until ready to serve. Place rice in bowl and ladle over the soup mixture. Top with the feta and maybe a sprinkle of cilantro or parsley! Enjoy!
