Pad Thai Chicken



I have some absolute favorite places around Escondido to consume amazingly delicious Asian dishes. I try to not only perfect these dishes alone, but I talk to the owners of restaurants, chefs and Asian food store owners to help me during my quests for good authentic Asian cuisine. How else do you learn? I have learned so much just by asking. One of my favorite places is the Asian market at 850 E Valley Parkway. This was previously La Sopresa Barata and actually still has a Mexican meat market inside as well as a taco shop. The owners and employees are so incredibly helpful as well as willing to teach you how to perfect your dish.

3 chicken breasts cut in strips
1/2 cup brown sugar
1 cup soy sauce (light if you choose for less sodium)
2 Tbl Hoisin sauce
4 limes
2 Tbl peanut butter
1/4 cup rice vinegar
1 cup bean sprouts
1 cup shredded or chopped carrots
1 cup diced bell pepper
1 cup chopped cilantro

5 garlic cloves finely diced
1 cup crushed peanuts
Package of Pad Thai noodles
3 eggs scrambled/cooked
Salt/pepper to taste
Red pepper flakes and Sriracha to add heat as you would like

Sauté your chicken strips in about 4 Tbl vegetable oil. Once cooked through, set aside, reserving the hot oil in the pan. Add in the carrots, bell pepper, green onions, bean sprouts, juice of two limes and garlic. Cook on medium heat until tender. Add in the peanut butter, brown sugar, soy sauce, rice vinegar and hoisin to create the sauce. Add in the scrambled eggs, chopped peanuts, chicken and cooked pad thai noodles ( boil for three minutes and add into mixture ) stir and let simmer for two minutes. Top with the cilantro and more chopped peanuts. Add salt/pepper to taste. Serve with red pepper flakes, Sriracha and slices of limes. Depending on your taste! You can also use Tofu for your protein or zucchini noodles if you are going low carb! Enjoy!
