Cauliflower Cheddar Bake



I love cauliflower. I love cheese. I love bacon. These are incredible alone and amazing together. Cauliflower is such a versatile vegetable. From cauliflower mash, to cauliflower pizza crust, this veggie is such a great base for a flavorful meal or side dish. Cauliflower Cheddar Bake can be just that. A main dish as a casserole or a side dish with a good steak.

This is a decadent, delicious meal that even your kids will like! DOUG Approved!

Preheat oven to 350 degrees

1 head of cauliflower chopped and steamed until soft
1 bunch of green onions diced
6 pieces of bacon



cooked and finely chopped
1 8 oz container cream cheese softened
1/2 cup ( one stick ) unsalted butter
1/4 cup Panko bread crumbs
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese

Mix the soft cauliflower, cream cheese and butter until smooth. Add desired salt and pepper to taste. Place in a 8×8 baking dish that has been sprayed with non cooking spray. Layer the shredded cheddar, mozzarella, bacon and green onions on top. Sprinkle the Panko bread crumbs evenly on the top of the casserole. Bake for 25 minutes. Let set for five minutes, serve and enjoy!
