Chicken Tikki Masala

 

 

I love trying different countries culinary cuisines. Indian food is so different because of the very deep, earthy seasonings that are used. Exposing ourselves to these different foods really makes us think differently about food and how to play with various flavors.

I had a great question in my inbox on my On The Menu Facebook page. Hailey Sampson wrote and asked me, “How do you find all of these different seasonings that you use?” Well, honestly I go to Sprouts and my local supermarket. Sprouts is great because you can get as little or as much as one seasoning that you need. If you just want to try a bit for one recipe, you can buy just 2 Tbl if that is all your recipe calls for which is fabulous! I hope this helps. Thank

2 lbs chicken cubed
2 Tbl ground cumin
2 Tbl garam masala
1/2 Tbl ground red pepper
2 Tbl ground turmeric
1 28 oz can crushed tomato
1 cup Greek yogurt
1 brown onion diced
6 garlic cloves minced
2 Tbl coconut oil
2 Tbl minced ginger
1 cup cilantro diced
Salt/pepper
Rice or cauli(rice)

In a deep sauté pan, add the coconut oil and diced onions. Caramelize the onions slowly on medium heat until golden brown. Add the garlic and ginger and cook for one minute. Add the crushed tomatoes, cumin, garam masala, turmeric and salt/pepper. Bring to a simmer. Add the chicken and cook for 20 minutes. Add the Greek yogurt and stir until mixed completely. You can serve this over rice or cauliflower rice sprinkled with chopped cilantro. Enjoy! Serves 6
