Crock Pot Beef Bourguignon

 

 

Crock Pots are an absolute lifesaver during the week. Use and abuse your Crock pot. It is your friend. It provides comforting food when you get home from a long day at work or when you have had a long day with the kids at home. It is such a great feeling to know dinner is done and you get to sit and enjoy a great meal with your loved ones at the end of the day.

I love this dish for many reasons. Its an easy prep the night before, it has wine in it and it has more wine in it! The alcohol cooks off during the day and leaves behind a deep flavor in a heart meal.

Serves 6 (with some leftovers!)

 

 

1 package egg noodles
1 1/2 lbs beef stew meat ( chop meat into bite sized pieces)
3 carrots diced
1 lb of white small potatoes diced
1 brown onion diced
6 garlic cloves diced
1 package frozen pearl onions
4 cups beef stock
4 cups burgundy wine
1/4-cup cognac
1/4-cup malt vinegar
3 celery stalks diced
6 pieces of bacon diced
1 Tbl garlic powder
1 Tbl onion powder
2 Tbl dried ground thyme
2 bay leaves
1/2-cup tomato paste
Salt/pepper

Combine ALL ingredients in a Crockpot on low for 7 hours. If you want the sauce thicker, add a cup of the hot liquid from the Crockpot to 1/3 cup of cornstarch and stir. Add that to the Crockpot mixture and stir. Cook your noodles as directed on package, minus one minute. Serve as a stew or over the egg noodles. Enjoy!
