Chicken Breasts stuffed with Feta & Spinach



I love switching things up and trying some fresh tasting meals. This week’s meal is chicken breasts stuffed with feta and spinach. If my 8 year old eats it, I will write about it. Exposing your children to different varieties of food is fun and rewarding. Especially when you can slip in some good greens like spinach, it is a bonus!

Preheat the oven to 375°. Serves 4

4 chicken breasts sliced halfway through

1 container (8 oz ) of Feta cheese

1 cup of thawed frozen spinach




Tbl garlic powder

1 cup parmesan cheese

Salt/ pepper

Mix all ingredients together in a bowl. Salt and pepper the chicken breasts on the inside and on the outside. Equally stuff the chicken breasts with the mixture. Spray a baking dish with non-stick cooking spray. Place each stuffed chicken breast, flap side down. Sprinkle the parmesan cheese on top. Bake for 40 minutes. Serve over some lemon rice and with an easy cucumber, red onion and tomato salad with a Greek dressing. Such an easy delicious recipe that is light and easy. Enjoy!
