It’s the aroma of food cooking on the barbecue and freshly cut grass that gets me excited for the summer ahead. Growing up in Valley Center as a child, my favorite memories were playing in the orange groves smelling those sweet orange blossoms and playing all day with my friends building forts. After a long day of being a kid, mom used to always have something delicious waiting for us at dinnertime. Now living in Escondido, I get to have the best of both worlds. My son gets to play at my parents house in the country and we get to create new memories at our home bythe pool with the whole family. Whether you are in the country or the city, remember to take time to create good food and lasting memories for you and yours. Here is one of my favorite side dishes for your upcoming family gatherings!
1 package of tri color pasta
1 cucumber diced
2 cups cherry tomatoes halved
3 bell peppers ( red green yellow) diced
1/2 cup green onions diced
3 celery stalks diced
1 cup shredded parmesan cheese
1/2 cup ranch dressing
1 bottle of balsamic salad dressing (I use Newmans Own)
Cook pasta as directed on package. Drain and let cool. Mix all of the ingredients in
with the pasta, stir together well. Chill for one hour. Serve and enjoy!
