40 Clove Garlic Chicken



 

 

I have definitely been getting good use out of my crock pot this year. The aroma of a delicious home cooked meal ready and waiting for you af­ter a long day at work is priceless. This weeks On The Menu is 40 Clove Garlic Chicken, which will absolutely make you feel like you stepped inside your mom’s house after a crazy day at school. I love my memo­ries of sitting around the dinner table and talking about our day over my Mom’s delicious home cooked meals. I took that for granted growing up, then after getting married I could barely cook mac and cheese (I used to measure the water to boil the pasta.) I didn’t care about learning, only eating my mom’s great meals. So, I

 

 

taught myself how to cook and this is a great way to get your kids involved to teach them how to make easy meals for when they are on their own.

40 cloves of garlic peeled

4 chicken breasts

1/2 cup dry white wine

2 Tbl chopped basil

1 tsp dried oregano

Peel and juice of one lemon
1 onion diced
Salt/pepper
Cornstarch
2 cups chicken broth

Throw all ingredients except the cornstarch in a crockpot. Stir. Cook on low for 7-8 hours. Take chicken out and shred. Take the sauce from the crockpot and put in a saucepan. Add about 1 Tbl of cornstarch, and whisk. You can either use a hand blender or food processor to finish this sauce until creamy. Serve over rice, noodles or mashed potatoes. Enjoy! This makes 4 to 6 servings.
