Filipino Pork Adobo


 

 

I am always looking for dinner inspirations. Something out of the usual that I can add as a regular in my meal rotations. Various cultures have such different flavors that do not always have to be difficult. Easy is good! One of my incredible coworkers Jasmin, brought up Filipino Pork Adobo.

The way she described it sounded easy and delicious. I thought I would change it up a bit and use pork loins, marinate it and put it in the crockpot all day to make it my own.

Serves 6

2 lbs pork loins
2 brown onions sliced in rings
1 1/2 cups soy sauce
4 bay leaves
1 cup water
1/2 cup peppercorns
8 cloves of garlic minced
4 Tbl brown sugar
1/2 cup rice vinegar
3 Tbl salt

Place everything in a Ziploc bag and marinate overnight. The next day, pour out everything in the bag into the crockpot. Cook on low for 7 hours. Serve over rice!
